chicken marsala

1 C Marsala wine
4 chicken breasts
salt and pepper
olive oil
2.5 C sliced mushroom
2 garlic cloves
1 medium onion
1 C marscapone cheese
2 Tablespoons Dijon mustard
2 tablespoons fresh chopped parsley

Brown chicken in olive oil with salt and pepper. remove chicken and set aside tented. Add more oil to pan and saute chopped onion, garlic and sliced mushrooms. Just until soft and browned. Add wine and reduce. Mix cheese and mustard in to thicken and flavor sauce. Sprinkle with chopped parsley, and serve over warm rice.
