English muffin bread

2 1/2 C unbleached flour
1 package of yeast=2 1/4 teaspoons
2 teaspoons sugar
1 teaspoon salt
1/8 teaspoon baking soda
1 C milk + 1/4 water (120-130 degrees)
cornmeal for dusting
Grease and dust a 8x4 in loaf pan with butter and cornmeal. In a bowl combine 1.5 C flour with yeast, baking soda, salt and sugar. Heat milk and water in a small sauce pan until warm. NOT HOT! Pour milk mixture into flour mixture and stir until well combined. And remaining flour and stir by hand until combined. Dough will be very soft. Pour into prepared pan. Dust top of dough with more cornmeal. Cover and let rise for 40 minutes. Or until doubled. Bake in a 400 degree oven for 20 minutes or until golden brown on top.
